Raw Chunky Tomato and Corn Soup

I’d like to share my latest soup concoction. I’ve been making raw soups lately and this recipe is my favorite. The best part is that it’s healthy, easy to make, quick, and tasty. This soup is refreshing and bursting with flavors. If you’re interested, here’s the recipe. If you don’t like it at room temperature, warm it gently on the stove.

Recipe for two:

  • 4 ripe tomatoes
  • 1 sweet corn
  • 1 red pepper on the smaller side
  • 5 sun-dried tomatoes
  • 1 shallot
  • green onions (optional)
  • juice of half a lemon
  • 1/2 C almond milk
  • 1/2 tsp – 1 tsp oregano
  • dash Himalayan sea salt

Chop one tomato, cut the corn off the cob, and divide the chopped tomato and corn into two soup bowls.


Blend the rest of the ingredients (except the green onions) together and pour into your tomato and corn-filled bowls. Garnish with the green onions. Pair it with some raw crackers, or eat as is. Enjoy!
