Spicy Sweet Potato and Corn Quinoa Salad

A friend of mine wants to diversify her cooking with quinoa, so she requested I do a post on one of my quinoa recipes. Quinoa is a great grain that is packed with nutrients. It is high in protein, rich in minerals, and even provides some omega 3 and 6 as well. What I love about quinoa is that it is quite diverse because of its neutral taste. You can eat it sweet or savory. However before cooking it, make sure to rinse well because of the saponin coating found on the grain in its natural form. If it’s pre-washed, I still recommend a light rinse. While cooking you’ll see the water bubbling up like soap if the quinoa is still contaminated with saponins. In South America, after rinsing quinoa, they use the rinsed saponin-liquid to wash their clothes with. As you may have guessed now, saponins acts like a detergent and is toxic, so make sure to rinse well before cooking this super grain.

Organic Spicy Sweet Potato and Corn Quinoa Salad Recipe

2 C Quinoa, cooked appropriately
2 C Sweet potatoes, small-cubed and steamed
2 C raw corn (if using frozen, thaw hours before or boil for 2 min.)
1/2 C raw green onions, sliced
1 raw red bell pepper, chopped
1 tbsp red wine vinegar
3 tbsp Organicville Sriracha sauce
(This sauce is better in taste and have better ingredients than the Asian Sriracha sauce.)
1/2 tsp pepper

Toss all the ingredients together in a big bowl and serve. Bon appetit!
