Here’s another simple quinoa dish for you. This is a hearty dish that we enjoy for dinner sometimes. We like that the sweetness of the sweet potatoes complement the spices of the lentil curry very tastefully.
Because this dish requires multiple items to be cooked, I take a short cut by using canned lentils instead of soaking and cooking them myself. If you buy pre-cooked lentils, make sure to buy lentils that are contained in non-BPA cans. The brand I buy from is a Canadian company, Eden Foods.
Organic Lentil Curry and Quinoa Bowl Recipe
1 C quinoa, rinsed and cooked accordingly
1 can lentils, drain and rinsed
2 C sweet potatoes, small-cubed and steamed
2 C spinach, raw
1/2 C yellow onion, minced
1/2 tsp turmeric
1/4 tsp cayenne
1/2 tsp cumin
dash Himalayan sea salt
1/2 C spring water
For the lentil curry, add the onions and lentils together in a ceramic pot, add the water and cook until the onions are done on medium heat. Add the spices and cook for a short period of time. Don’t really cook it down; instead, stir until the flavors come together and take it off heat.
Spoon the finished quinoa in a bowl, layer a bed of spinach, add the lentil curry, and top with sweet potatoes. Bon appetit!
