Banana Cream Pudding

The organic dessert of the week is a raw banana cream pudding. I originally was going to make a personal sized banana cream tart, which is this recipe but with a raw sprouted almond and date crust, but I decided against it to keep it lower fat by not eating so much almonds in one sitting. Again, this recipe does not contain added sugars, oil or salt. It’s simply whole ingredients, high carb and low-fat — keeping it healthy and good fuel for my workouts and brain power!

1 ripe banana (ripe bananas should not only be yellow, but also speckled brown)
2 oz young coconut meat
1 pitted medjool dates
1/3 c raw coconut water
1/2 tsp non-alcoholic vanilla
1/4 tsp cinnamon

1. Soak the date with coconut water for 10 minutes or until softened. Soaking is only necessary if the dates are not fresh and juicy.
2. Blend all ingredients together until smooth.

Voila! It’s that simple and quick. Enjoy!
